Legal name (or business name), tax ID (SSN or EIN in the US), address, date of birth, and your business bank account details. Stripe collects everything through its own secure onboarding.
Most vendors are verified in minutes. Some may be asked to upload a photo ID or a business document; Stripe emails you if anything is needed.
